Inizio Pistachio clone
This is a clone of my favorite pizza from Inizio in Charlotte.
General Prep
- whole milk ricotta, mixed to reincorporate and left on the counter
- slice mozzarella and leave out
Pesto - mortared (preferred) or food-processored
- 10g parmigiano reggiano (grated)
- 35g pistachios
- 2 medium cloves garlic
- 1 tsp-ish olive oil
Pre-bake Toppings - in order
- olive oil
- Pesto
- 1 ball (4oz?) buffalo mozzarella, in thin slices
- 5-6 tsp ricotta, dolloped
Post-bake
- Rosemary - sprinkled
- 15-30g chopped pistachio (optional)
